Curries are versatile meals that can be adapted to just about any season or occasion. Warmer weather doesn’t mean you have to go without your favourite curry. In fact, a little glow will actually cool you down.

Summer conjures up images of classic family meals around a laden table under a tree. Whether it is a lunchtime feast or a beautiful, relaxed evening meal, these are the best ways to get the family together, swap stories and catch up. So try one of these options – and their accompaniments, of course, as the perfect centre pieces for your table.

BEEF MADRAS
Madras is a traditional Indian, tomato-based, deliciously spicy meal – often made with beef. But, this recipe also works really well with lamb. Its dark red colour and fragrant blend of spices is the ideal option for the whole family. The zingy sauce means you can happily add extra potatoes to add bulk if you are cooking for a large family.

Or, alternatively, serve over classic basmati rice. Add some fresh coriander or a cucumber and mint raita. These cooling condiments work wonderfully to calm the taste buds. Come to think of it, there is nothing quite like feeling as cool as a cucumber on a hot day!

CHICKEN TIKKA
Chicken Tikka is a vibrant and flavourful chicken dish which has a creamy and smokey flavour. For a vegetarian option, the chicken can be substituted with paneer or peeled and cubed aubergine.

CHICKEN KORMA
End of the month – no more chicken in the fridge? This curry also works perfectly if you replace chicken with a can of lentils. It’s smooth, creamy and nutty flavour spells success at dinner time! Try a side of flaky roti or buttery naan bread and a sprinkling of freshly chopped parsley.

BUTTER CHICKEN
This recipe is great for kids who are not very adventurous when it comes to spice. A firm favourite, butter chicken is a full-rounded curry with creamy, buttery notes. The leftovers make great toasted sarmies – although the likelihood of leftovers is pretty slim given how popular this dish is!
