Spicy Chicken Macaroni

Spicy Chicken Macaroni

Preparation time: 25 Minutes
Cooking time: 35 Minutes
Serves: 4 to 6

Ingredients
4 chicken pieces, boiled and shredded
2 cups macaroni, boiled and drained
1 Tbsp. (15 ml) cooking oil
1 onion, finely chopped
½ green pepper, finely chopped
1 Tbsp. (15 ml) Rajah Flavourful & Mild Curry Powder
2 cups butternut, peeled and cut into small cubes
½ bunch spinach, cleaned and chopped
¾ cup water
1 Knorrox Chicken Stock Cube

Instructions
1. Prepare chicken and macaroni then set aside.
2. Heat oil in a pot and gently fry the onion and green pepper until soft.
3. Add the Rajah Flavourful & Mild Curry Powder and fry for 1 minute, stirring constantly.
4. Add the butternut, spinach, water and stock cube to the pot and allow to simmer for 20 minutes or until all the vegetables are tender, stirring occasionally.
5. Remove from the heat then mix with the macaroni and chicken and serve.
