Spicy Pumpkin Stew

Spicy Pumpkin Stew

Preparation time: 30 Minutes
Cooking time: 40-45 Minutes
Serves: 4 to 6

Ingredients
2 Tbsp. (30 ml) cooking oil
1 onion, finely chopped
½ green pepper, finely chopped
1 Tbsp. (15ml) Rajah Flavourful & Mild Curry Powder
2 tomatoes, finely chopped
500g pumpkin, peeled and cubed
2 carrots, peeled and sliced
2 potatoes, peeled and cubed
1 ½ cups water
1 Knorrox Chicken Stock Cube

Instructions
1. Heat oil in a pot and gently fry the onion and green pepper until soft.
2. Add the Rajah Flavourful & Mild Curry Powder and tomatoes and fry for 1 minute stirring constantly.
3. Add the pumpkin, carrots and potatoes to the pot together with the water and stock cube and bring to the boil.
4. Reduce the heat and simmer for 30 minutes with the lid on or until all the vegetables are tender.
5. Serve with rice.
