Spinach and Potato Curry

2 tablespoons (30ml) oil
1 onion, sliced
1 tablespoon (15 ml) Rajah All-in-One Curry Powder
4 potatoes, cut into chunks
5ml Robertsons Coriander
2 chilies, seeded and chopped
1 teaspoon (5 ml) Robertsons Ginger
2 tomatoes, chopped
3 cups (750ml) water
1 packet Knorr Curry Vegetable Soup powder
300 g spinach, roughly chopped
- Fry onion in oil until soft. Add Rajah All-in-One Curry Powder and fry for a minute to release flavour.
- Add potatoes, spices, tomatoes, water and Knorr Soup. Cook and bring to the boil, simmer for 10 minutes. Add spinach and simmer over low heat for a further 15 minutes or until potatoes are cooked through.
- Serve with roti or as a bunny chow.
