Spinach and potato curry

Spinach and Potato Curry

Serves: 4


2 tablespoons (30ml) oil
1 onion, sliced
1 tablespoon (15 ml) Rajah All-in-One Curry Powder
4 potatoes, cut into chunks
5ml Robertsons Coriander
2 chilies, seeded and chopped
1 teaspoon (5 ml) Robertsons Ginger
2 tomatoes, chopped
3 cups (750ml) water
1 packet Knorr Curry Vegetable Soup powder
300 g spinach, roughly chopped


  1. Fry onion in oil until soft. Add Rajah All-in-One Curry Powder and fry for a minute to release flavour.
  2. Add potatoes, spices, tomatoes, water and Knorr Soup. Cook and bring to the boil, simmer for 10 minutes. Add spinach and simmer over low heat for a further 15 minutes or until potatoes are cooked through.
  3. Serve with roti or as a bunny chow.
